Taste & serving

Yunnan is floral and subtly herbal. Sencha combines citrus notes with gentle umami. Jasmine is soft and fragrant, while Citronel is fresh and citrusy.

One bottle of each variety, 4 × 750 ml. Bottle-aged and unpasteurised.

Serve chilled in a wine glass. Fine sediment is natural in unfiltered drinks. Gently turn the bottle once before opening to distribute it evenly.

Fermentation

Our TEA drinks ferment in a steel tank for four to five weeks. They then age on the lees in the bottle for at least six months and up to one year. After ageing, they are disgorged.
