Taste & serving
Bergamot, lemon verbena and lemon thyme give it a fresh citrus character. Dry and naturally sparkling, with a gently bitter finish.
Serve chilled in a wine glass. Fine sediment is natural in unfiltered drinks. Gently turn the bottle once before opening to distribute it evenly.

We source our ingredients locally and from Austria wherever possible. Our bergamot comes from organic farmers in Italy.

Fermentation
We ferment infusions of herbs and flowers with our own cultures. Each batch ferments for at least five days, and longer depending on the variety and ingredients. This develops the bubbles, acidity and flavour. The drinks remain unfiltered, with no additives.
