KONANNA
KONANNA creates naturally fermented sparkling drinks based on tea and herbs. Dry, complex and alive, they are made for people who enjoy depth and character and who are looking beyond conventional wine or soft drinks. Our work is rooted in the philosophy of natural wine, shaped by minimal intervention, organic ingredients and trust in fermentation. KONANNA is neither a soft drink brand nor a wine alternative in the classic sense. Our drinks exist somewhere in between, served and approached like wine, yet made from tea, herbs and botanicals. They are meant to be enjoyed at the table and in conversation, not simply to quench thirst.
We founded KONANNA in 2024 after years of development, experimentation and a deep belief in the potential of low and non-alcoholic drinks. Both of us grew up in the Weinviertel in northeastern Austria, surrounded by vineyards and friends making natural wine, a world that continues to shape how we think about taste, time and craftsmanship. Anna brings long-standing experience in juice and food production, while Konstantin first approached fermentation through homebrewing, a curiosity that soon became a passion. We met while studying food product development, where our shared fascination for flavour, process and detail laid the foundation for what would later become KONANNA. What we were missing were drinks that feel grown-up without relying on alcohol, drinks with tension, dryness and depth that make sense next to food and conversation. KONANNA is not about replacing wine, but about expanding the table.
Our Pétillant Naturel Teas are fermented and aged directly in the bottle using the traditional Méthode Ancestrale. They are low in alcohol and reflect the individual profiles of each tea variety. From floral and citrusy to earthy and bold. Each batch is unfiltered, unpasteurized, and develops its own character over time with fine bubbles, layered aromas, and natural complexity. Made without added cultures, processing aids, or sulfites, KONANNA aims to push the boundaries of what fermented tea can be – offering a refreshing alternative to wine and sparkling beverages, with deep respect for nature and craftsmanship.
Pétillant Naturel – or Pét Nat – refers to naturally sparkling beverages that finish fermenting in the bottle. This process captures the natural carbonation without any added pressure or artificial steps. Unlike filtered or pasteurized sparkling drinks, Pét Nat remains raw and alive, often slightly cloudy and vibrant in taste. Each bottle becomes a reflection of the ingredients, the fermentation environment, and the moment it was bottled.
ANTI continues our exploration of fermentation, shifting the focus from tea to botanicals. Each drink is crafted from organic herbs and blossoms, fermented with carefully cultivated bacteria and yeasts that create gentle acidity and fine natural carbonation. Entirely alcohol free, unfiltered, and made without additives, ANTI captures the quiet complexity of plants in a bright and refreshing form. It is not about removing alcohol afterwards, but about building depth and length through fermentation and techniques developed and refined over time.
